Beautiful spring at last: All in one salad

The days are longer. The light pours down from the sky (when rain doesn't). And the grass is coming up green. So it's time for us to push past the dark season and into the sunshine ourselves.

To those of you who missed us, we thank you for your kind patience. We missed you. We'll be skipping right over to visit your way too.

Winter and its darkness we consign now to winter. Be done. We are grateful this moment for spring of the year and its seed packets arriving by mail. We are grateful for birdsong when we wake each morning and also for falling asleep at night to the sound of rain tapping against the window glass. We are grateful that the hens are laying bountiful eggs, and that Fern and Blossom's egg-money savings has now mounted up to $171.35 cents, which is maybe half-way to their dream of welcoming home a goat (or, dare I say it, twin goats). We are grateful that it is the season of matzah ball soup and bright eggs hidden on the garden gate (and soon enough in nests along the honeysuckle hedge).

To celebrate this season, we're sharing a couple of recipes that make the most of early spring's delights. Here is Lidia Bastianich's Scallion and Asparagus Salad, paired with some Pennsylvania Pickled Beets. (Please note that my eggs were only dipped in the marinade for an hour or so because I wanted a pink color rather than a red.) Garnished with fragrant dill, this dual-salad makes any table feel as though family and friends are gathered.

Sooo glad you've posted on your family blog once again. I must say that I've missed reading it and admittedly fretted a bit about what may have happened at Four Green Acres.

Glad that Spring has come your way. The asparagus salad looks delicious! Spring has arrived here in California (including some rain with squalls this morning). For my family the arrival of six chicks has marked the beginning of Spring. They're in a brooder cage in my kitchen - not the ideal place (feathers flying and all) but the cage is too wide to take through any doorway.

Conny: I've missed you! It has been a hard winter, but springtime gives me hope. And I'm so excited for you: There is nothing like the arrival of chicks to make it seem like a new season...and a whole new world. They quickly become part of the family, yes? Especially in the kitchen! Congratulations!

Stephanie: I agree...but we ate it anyway! We were hungry for green!

Welcome back - missed you, June! I love asparagus combined with hard boiled egg - probably because that is the way my mother served it.

Great idea to save the egg money to buy goats - the farm version of the divident reinvestment plan. I'm looking forward to getting some chickens this year!

Ah, now that it's officially April, and I've officially survived another year of March Maddness in Maine, I'm happiest about Four Green Acres being back (whew!) and about the opportunity to get outdoors for 'yahd work'.

Camie: Oh, dear Camie! It is wonderful to hear we've been missed though I do feel so terrible about it. Terrible. But we feel a new beginning deep in our spirits now. I wish you spring. We had almost no snow this year. That was a blow to us. We need the snow to lighten up the view and to give us a winter playground. It made for a bleak season. I know it's hard to wait for it to melt though... Hurry up, mud season!

Running Late: I wish you spring. But next year, I would like some snow in Maine. It was a scanty season, and it was a little unsettling to see Fern and Blossom hunting for eggs in little summer dresses...in Maine...on April 4. Where were the snow boots? Where was the mud?

From what I've read mid-August!! I'm tempted to rent season 3 dvds to see them again and see the extras! As for the winter, sometimes we do have such things! I remember one end of March Easter with very warm weather.
